Kid’s dairy free banana, coconut, cashew bites

kids-dairy-free-banana-coconut-cashew-bitesIf you’re looking for a good healthy snack for your little ones our kid’s dairy free banana, coconut, cashew bites are it! They’re quick, simple, and delicious, give them a whirl and let your kids be the judges.

Preheat your oven now to 150C/ 300F because they only take 10 minutes to whip up.

These are especially good for breakfast as they are made up of oats. Our bubba hates oats, it doesn’t matter what I add or how lovely I think it tastes he won’t eat it – until now! Once one is finished he wants another quick smart, he loves them and I’m sure your little ones will too.

For this recipe I used regular oats but of course you can swap them out for gluten-free if you prefer.

kids-dairy-free-banana-coconut-cashew-bitesYou might like to leave the cashews whole if you don’t have small children eating although giving them a rough chop helps the flavor go through and still leaves you with a bit of crunch.

kids-dairy-free-banana-coconut-cashew-bites Chuck in a tablespoon of honey for extra sweetness (optional), they’re yummy like that but I skip that bit now because bubs is only 8 months and lil miss likes them just the same without it (I always used to add it in the past though.)

All you’ll need for our kid’s dairy free banana,coconut,cashew bites is a:

  • fork
  • bowl
  • baking paper
  • baking tray
  • preheated oven at 150C/ 300F
  • freezer or zip lock bag and a
  • meat mallet (or something to smash the nuts)

There you have it, a healthy snack for your kids.

Ingredients

  • 150g oats
  • 2 large bananas
  • 40g cashews (unsalted)
  • 30g coconut oil
  • 1tsp cinnamon

Instructions

  1. Pop your bananas into the bowl and mash them.
  2. Add the coconut oil (any temperature is fine, just make sure to mix it in really well if it is hard) along with the oats and cinnamon.
  3. Put the cashews into your bag (to stop them flying everywhere) make sure to hold the opening or tuck it under, then smash them until they are roughly crushed.
  4. Mix everything together.
  5. Roll into roughly 1 1/2 inch diameter flattened balls and place on your baking paper lined tray.
  6. Cook for 20 minutes at 150C/ 300F (for a slightly moist center.)
